Mouse study links soybean oil to obesity mechanism
Researchers at the University of California Riverside report in the Journal of Lipid Research that mice on a soybean oil–rich diet gained far less weight when genetically altered to reduce conversion of linoleic acid into oxylipins, implicating those metabolites in diet‑induced obesity. The team identified specific oxylipins from linoleic and alpha‑linolenic acids associated with weight gain and fatty liver in normal mice, while cautioning the findings are in mice and not directly generalizable to humans.
